
So we got this crazy snow/terrible ice storm this past weekend!! Of course they are calling for it again this weekend..typical. Naturally I had to rough it to work only for all my associates to call out and the mall ended up closing at 5pm. So it had snowed all Friday night and Saturday morning, the problem was that the temperature continued to drop all day Saturday turning everything into a GIANT ice skating rink. Now this ice skating rink includes my driveway and street. Kara and I were craving a yummy breakfast filled with eggs, bacon , grits, pancakes....so being a little dumb decided to drive=not smart. Unable to get out of the neighborhood we had to WALK to the grocery store. Luckily there is a delicious Flying biscuit cafe in Stonecrest so we were able to get our breakfast. Now the amusing part of this walk was the two of us in general. Imagine just leaving church morning to see the two of us "roughing it" through the snow and ice. You can predict the small fit I was throwing. But it is all gone for now and 60 degrees again..:)
Too Funny! Now...these breakfast items don't seem to fall under your new eating habits??? However, I must say you look super thin walking above!

ReplyDelete3 Tblsp. olive oil
2 lbs. diced chicken meat (uncooked, chopped)
4 cloves garlic, minced
2-14.5 oz. cans chicken broth
2-18.75 oz. cans tomatillos, drained and chopped
2-16 oz. cans diced tomatoes
2-7 oz. cans diced green chiles
1 tsp. dried oregano
1 tsp. ground coriander
1/2 tsp. ground cumin
4-15 oz. cans white beans, drained
10 oz. frozen corn
salt and pepper
Saute onion
Cook in crock-pot 6-8 hours on low
Serve with lime, cilantro, avacado, tortilla chips or my favorite....cornbread
